History:Situated in the heart of Burgundy's Côte Chalonnaise, this family estate with 30 hectares of vines had its origins in the 17th century. In 1964, Michel Sarrazin first began estate bottling. In 1986 and 1992, his sons Guy and Jean Ives took over the estate which now produces 12,500 cases per year. This new generation, like so many others, has been open to change and experimentation to improve the quality of their wines.
The emphasis is on preserving the freshness and purity of the fruit while maintaining the sense of terroir. To this end, Guy and Jean Ives limit production by pruning and green harvest. The red wines are destemmed and macerated for 10-15 days. The reds are aged in barrels, 50% of which are new; the rest are one and two year old barrels. The wines are racked only before bottling and are not fined or filtered.
For the white wine, Guy and Jean Ives use a gentle pneumatic press. Half the wine is fermented in temperature controlled tanks, and half in new barrels. They are blended before bottling and are lightly filtered.
The wines of this estate are fresh and clean with great aromatics and pure fruit flavors on the palate. The tannins are soft and round and the finishes crisp and clean. With their hard work and dedication Guy and Jean Ives are producing some of the best wines in this up and coming appellation.
